Pantry Lunch: Tinned Sardines, But Make It Chic

Sometimes the best lunches come straight from the pantry with just a few fresh touches. This week, I made a quick pantry lunch built around one of my favorite staples: tinned sardines.

I grabbed a bunch of endive leaves and smeared each one with a little hummus, added a drizzle of Calabrian red chili oil, and topped them with sardines. Some I kept simple — just the hummus and chili oil — and others I added the sardine for a salty, rich bite. The combination of the crisp endive, creamy hummus, a little heat from the chili, and the briny sardine made for the perfect quick, no-fuss lunch.

It’s one of those lunches that takes like 5 minutes, feels satisfying, and somehow makes a regular weekday feel a little European — like you’re having a quick bite in a seaside café somewhere in Portugal or the South of France.
